This Quinoa Curry Bowl recipe has fits me perfectly. I love quinoa. I love curry. And I love that this recipe is quick and easy. As much as I love fresh local vegetables, I appreciate the convenience and nutrition of frozen vegetables.

For those of us who live in Northern climates, frozen vegetables have more nutrients than the so-called “fresh” vegetables that we have available in our stores. The frozen were flash froze in the field minutes after picking. The “fresh” was picked green weeks previously and shipped from southern climates to be ripened for our store shelves. By then, the “fresh” has lost many nutrients. Of course the best is to grow it in your own garden or buy it locally grown at your farmer’s market.
