In my transition to a plant-based lifestyle, I discovered all kinds of wonderful foods that I didn’t know that I really, really like. One of these foods is beets. So you can imagine my excitement when I discovered this Sweet Beet Salad.

I’ve learned to really enjoy trying new whole grains, vegetables and fruit. There are so many delicious and satisfying options with plant-based whole foods. There is no way you should ever be bored with your meals.
