Neal Barnard, MD, is the president of the Physicians Committee For Responsible Medicine (PCRM). As you may know, I firmly believe that we should use food as our medicine and that our medicine should be our food. Much of our runaway healthcare costs today could be avoided with a healthy plant-based diet and exercise. Sadly, most people try to make lifestyle changes with willpower &#8211; which is a short burst of energy that is all too quickly used up. Self-hypnosis is proven to be an effective way to make lasting lifestyle changes. It only makes sense that you learn hypnosis and to improve your health.</strong></span></p>

<p>MT: Dr. Barnard, if you were asked (as I am now re-asking) to place one food item at the top of the list which, in your opinion, you would recommend be banned as a massively-consumed food item, what might it be?</p>
<p>NB: I would perhaps put chicken at the top of the list. Americans now eat one million chickens per hour, around nine billion every year.</p>
<p>MT: Why so many chickens?</p>
<p>NB: Because we imagine it to be some kind of health food.</p>
<p>MT: Is it, in your opinion?</p>
<p>NB: Well, collectively we are in the worst physical shape we’ve ever been in.</p>
<p>MT: On what basis?</p>
<p>NB: Our obesity rates have never been higher, and cholesterol-lowering drugs have never been so popular. In a word, we are a mess.</p>
<p>MT: And you are suggesting, opining – that chicken is doing what?</p>
<p>NB: As a doctor I am not alone in being of the belief – call it opinion, if you care to – that the intake of chicken is one – among many – drivers of the continuing increase in meat intake, that, in turn, carries its load of fat and cholesterol. These do take their toll. The problem with chicken is that it is wrongly promoted as a healthful choice, so people now eat more of it than ever.</p>

<p>Bloomberg, November 1, 2011: A growing body of medical research at leading universities and government laboratories suggests that processed foods and sugary drinks made by the likes of PepsiCo Inc. and Kraft Foods Inc. (KFT) aren’t simply unhealthy. They can hijack the brain in ways that resemble addictions to cocaine, nicotine and other drugs.</p>
<p>“The data is so overwhelming the field has to accept it,” said Nora Volkow, director of the National Institute on Drug Abuse. “We are finding tremendous overlap between drugs in the brain and food in the brain.”</p>
<p>No one disputes that obesity is a fast growing global problem. In the U.S., a third of adults and 17 percent of teens and children are obese, and those numbers are increasing. Across the globe, from Latin America, to Europe to Pacific Island nations, obesity rates are also climbing.</p>
<p>The cost to society is enormous. A 2009 study of 900,000 people, published in The Lancet, found that moderate obesity reduces life expectancy by two to four years, while severe obesity shortens life expectancy by as much as 10 years. Obesity has been shown to boost the risk of heart disease, diabetes, some cancers, osteoarthritis, sleep apnea and stroke, according to the Centers for Disease Control and Prevention. The costs of treating illness associated with obesity were estimated at $147 billion in 2008, according to a 2009 study in Health Affairs.</p>
<p>Sugars and fats, of course, have always been present in the human diet and our bodies are programmed to crave them. What has changed is modern processing that creates food with concentrated levels of sugars, unhealthy fats and refined flour, without redeeming levels of fiber or nutrients, obesity experts said. Consumption of large quantities of those processed foods may be changing the way the brain is wired.</p>

Similar results were found in the European Prospective Investigation into Cancer and Nutrition study, where men who had the highest omega-3 levels had the highest risk for prostate cancer.</p>

I admit, I also had a bit of trepidation about what <em>cons</em> they might conjure up. Thankfully, I never heard any cons. <h2><em>Pros and Cons of Going Vegan</em></h2>
<p>&#8220;It is a little bit of a change and whole lot of people know that they want to do it because they know if they do it they can get rid of all the cholesterol, all of the animal fat and they can be slim and healthy,&#8221; said Dr. Neal Barnard from the Physicians for Responsible Medicine. Dr. Barnard says a plant-based diet can help people lower their cholesterol, blood pressure, and lose weight. But it does require a lot of meal planning. Vegan convenience foods can help ease the transition, but dietitians say just because it&#8217;s vegan, doesn&#8217;t mean it&#8217;s healthy.</p>
<p>&#8220;If it comes in a package, it&#8217;s still a processed food,&#8221; said registered dietician Rececca Scritchfield.</p>
<p>All that food can still be packed with calories, sodium and sugar, so read labels carefully, she advised.</p>

<p>The use of processed foods in any eating strategy should be minimized. Sometimes I hear from clients that they are trying to take short cuts to healthy eating by purchasing packaged vegan convenience meals. When I send them home to read the label, they rarely continue to purchase processed food.</p>
<p>In the news clip, the question is raised about protein. Just a few weeks ago I wrote <em><strong><a title="Permanent Link to Where do you get your Protein if you don’t eat Meat?" href="../where-get-protein/" rel="bookmark">Where do you get your Protein if you don’t eat Meat?</a></strong></em> where I pointed out that if you are healthy, it is impossible for you to have a protein deficiency if you only eat plant-based food. The question I always ask is, &#8220;<em>Who do you know that has a protein deficiency?</em>&#8221; The answer, &#8220;<em>no one</em>.&#8221;</p>

<p>Dr. Gupta affirms that research shows people who followed Dr. Esselstyn&#8217;s diet became heart attack proof, while people who dropped out of his program and went back to the standard American diet &#8212; died of or got sicker with heart disease. A plant-based diet works! says Dr. Gupta. Good food heals, bad food kills. It&#8217;s really that simple.</p>
<h2>100 years from now when people look back at today&#8217;s Standard American Diet, they will think of it as radical.</h2>
<blockquote><p>In my book, <em>Becoming Slender For Life</em> I write that, &#8220;My recommendations for healthy eating are radical—and some would call them extreme. But look at it this way. Radical changes produce radical results. Small changes produce small results. Over the years, I have consistently seen that people who make radical changes have the greatest success and tell me it was easy. They find it easier to just change, and they discover that any desire for the fatty foods that caused them to put on their excess weight very quickly vanishes. Those who make small changes are the least likely to succeed and have the most difficulty. Moderation may work for moderate people, but not for the rest of us compulsive, passionate, obsessive people.</p>
<h2>Moderation is killing Americans</h2>
<p>Nutritionist Jeff Novick got this absolutely right when he wrote: “The concept of Moderation is killing Americans. On average, Americans are taking in less than 40% of the minimum recommended amounts of whole grains, vegetables, fruits and fiber. Yet, at the same time, they are taking in over 230% of the amount of saturated fat, added sugars, other fats, refined grains and sodium.</p>
<p>So, who can moderate?</p>
<p>Moderation would do absolutely nothing<br />
to improve these numbers.</p>
<p>What we do need is a dramatic increase in the amount of fruits, vegetables and whole grains while at the same time a dramatic decrease in the amount of saturated fat, added sugars, fats, refined grains and sodium.</p>
<p>Moderation is only an excuse and rationalization which is being fueled by the clever marketing and advertising of the food industry to keep us doing the things we know we shouldn&#8217;t be doing and to keep us consuming their products, which in the end, is actually a major contributor to our ill health and early death.” Chapter 5, <strong><em></em></strong><strong><em><strong><em><a title="Becoming Slender For Life" href="http://hypnosishealthinfo.com/store/becoming-slender-for-life" target="_blank"><strong><em>Becoming Slender For Life</em></strong></a></em></strong></em></strong> updated second edition, page 128.</p></blockquote>
<p>Today, using food as medicine is radical. My prayer is that we don&#8217;t have to wait for 100 years for this to be <em>normal</em>.</p>
