One client shared with me a recipe for rice pudding and I have told several of you about the wild rice dressing that my wife has been using in the stuffed punkin that I wrote about in my November 1, blog post.  I love rice pudding and have been thinking that I was going to go on a hunt for a vegan rice pudding recipe. I didn&#8217;t even have to look, it was mentioned in a conversation and my eyes lit up. I am grateful that she remembered and emailed me the recipe. I haven&#8217;t tried it, but it looks really great. I think that I will be bringing it to our families Thanksgiving Dinner. You also may know that I love stuffed pumpkin. Its a big hit at our Thanksgiving Dinner &#8211; so big that we make two. One to share and one for us so that we have leftovers. Last year my Marilyn made a wild rice dressing that I like better than the bread dressing used in the original recipe.</strong></span></p>
<p>I have told several of you about stuffing the punkin with wild rice dressing and you asked for the recipe. When I asked Marilyn if she&#8217;d write it up to share she replied with &#8211; &#8220;there is no recipe&#8221;. She just takes a scoop of this and a dash of that and makes it up as she goes. I deeply appreciate her efforts to approximate what she does in writing to share with you.</p>

<h2><em>Rice Pudding with Cranberries &amp; Pistachios</em></h2>
<p>Author: Bridget Nichols, adapted from Kevin Lynch on Closet Cooking.com</p>
<p>Rice pudding is creamy, sweet and warming on a cold winter night. The addition of dried cranberries and pistachios creates a festive red and green holiday classic.</p>
<p><strong>Ingredients:</strong><br />
5 cups coconut milk (or almond, rice or soy milk)*<br />
½ cup Arborio rice<br />
¼ teaspoon salt<br />
¼ cup agave nectar<br />
1 ½ teaspoons vanilla extract<br />
2 teaspoons orange zest<br />
½ teaspoon ground cinnamon<br />
½ cup dried cranberries (no sugar added)<br />
½ cup pistachios, shelled</p>
<p><strong>Instructions:</strong><br />
Place the coconut milk, rice, salt agave nectar, vanilla extract, orange zest and cinnamon in a medium saucepan and bring to a boil.<br />
Reduce the heat and simmer for 25-35 minutes, stirring occasionally, until rice is creamy and tender.<br />
Mix in cranberries and pistachios, reserving some for garnish.<br />
Remove from heat and let cool.</p>
<p>Serves 4</p>

<p><strong>Wild Rice Dressing</strong></p>
<p>1 cup sliced mushrooms<br />
2 cloves garlic, pressed<br />
1 onion, chopped<br />
1 ½ cups chopped celery<br />
2 small apples, peeled &amp; diced<br />
1 cup apricot nectar<br />
1 cup cooked white beans<br />
2 tablespoons chopped fresh<br />
parsley<br />
1 tablespoon soy sauce<br />
½ teaspoon Italian seasonings<br />
½ teaspoon dried sage<br />
1/8 teaspoon pepper<br />
4 cups wild rice*</p>
<p>To prepare stuffing: Sauté the mushrooms, onion, celery and apple in the apricot nectar for 10 minutes. Add the beans and all of the seasonings and simmer for a few minutes to allow the flavors to blend. Stir in the bread cubes.</p>
<p>You can add other vegetables that you like in the dressing; I have put in green peppers and zucchini.</p>
<p>*You can substitute 2 to 3 cups whole wheat bread cubes<br />

Seems like I just took down the Christmas lights and its time to put them back up again! Well, like it or not, it is that time of year when we get busy with the holidays and all the preparations that go with them. I&#8217;m often asked about what we do for Thanksgiving Dinner. There will be a real turkey for the meat eaters who join us and of course again this year we will be having one of my favorite meals, Stuffed Pumpkin. In fact, Marilyn made one last night &#8211; ohhhhhhhhhhh soooooooo gooooooood!!!!!!!!!!!!!!</strong></span></p>
<p>Thanksgiving and the holidays do not have to be a time of weight gain. In fact, most Slender For Life™ clients continue to lose weight right through the holidays. Tribal feasts like Thanksgiving are perfect meals for eating healthy. You can celebrate the bountiful harvest with squash, yams, green beans, potatoes (I love the little blue potatoes), salad and &#8230;&#8230; I am getting hungry just thinking about it! You can make all of these vegetables fat free and they are delicious! Here is the recipe for Stuffed Pumpkin:</p>

<h2><em>Stuffed Pumpkin</em></h2>
<p>Stuffed Pumpkin is a center piece of Roger and Marilyn Moore’s Thanksgiving Dinner</p>
<p>Sauce</p>
<p>1 cup apricot nectar<br />
½ teaspoon ground ginger<br />
1/8 teaspoon ground coriander<br />
Stir together and set aside. Heat and pour over pumpkin and dressing when serving.</p>
<p>Stuffing</p>
<p>1 cup sliced mushrooms<br />

<p>Pumpkin</p>
<p>1 medium pumpkin</p>
<p>Cut off the top of the pumpkin and save for a cover. Clean out seeds and string portion Place bread stuffing inside, cover with top of pumpkin. Place in a large roasting pan with 1 inch of water covering the bottom of pan. Bake at 350º for 1 ½ hours or until pumpkin can be pierced with a fork.</p>
<p>NOTE:</p>
<p>You may also use any of the following: Two medium acorn squash cut in half, butternut squash, cut in half, or banana or Hubbard squash. Instead of bread stuffing, you can use wild rice.</p>

<p>The Stuffed Pumpkin looks beautiful when it comes out of the oven a golden brown. I&#8217;ve learned that we need to make 2 of them. One that gets served at Thanksgiving dinner and another one that gets set aside as<em> left overs</em>. When we made the mistake of only making one, it was all gone by the time everybody left. IT IS THAT GOOD!</p>

<p>This time of year, the Thanksgiving and Christmas Holidays frighten many people who eat a healthy diet. They wonder how to socialize with friends and how to prepare a meal in their home. These two days are supposed to be the largest feasts of the year. Yet in fact, both dinners are the healthiest, most vegetarian-like, most McDougall-like meals people eat all year long. Traditionally, these holiday dinners consist of mashed white potatoes, roasted sweet potatoes, a bread stuffing, butternut and acorn squash, cranberries, and a variety of green vegetables, including Brussels sprouts, carrots, cauliflower, and green beans. For dessert, pumpkin pie ends the feast. That&#8217;s a cornucopia of starches and vegetables. The turkey served is the leanest of all common meats. The truth is that every other dinner consumed by Westerners all year long is far richer in fat, cholesterol, salt and sugar than is eaten at these two traditional festivals. Therefore, if you are a healthy eater you will find Thanksgiving and Christmas the two most comfortable times of the year to socialize with all of your family and friends. I have laid out the menu, shopping list, and time schedule so that you will be able to more easily prepare a successful meal.</p>
