Vegan Fried “Chicken”
I never thought that I’d be thinking about vegan fried “chicken”. Maybe because its summer that I got to thinking about childhood Sunday picnics. On Saturday my mom would fry up a bunch of chicken, make potato salad, chocolate cake and cool aid. Sunday, after church, we go to some park, spread the blanket on the ground and eat our cold chicken, potato salad and cool aid. Those are great memories!
I haven’t had chicken in many years, but these memories got me thinking. So I looked to see what I could find and came across this Vegan Fried “Chicken” recipe. I think it’s worth a try and I’ll use the Mexican Potato Salad to go with it. (And, water of course!)
The Spruce tells us that, “This fried seitan “chicken” dish is deep fried, so it isn’t particularly healthy, though it is cholesterol-free and it sure is mighty tasty!”
