Quick easy weight loss meals

This week’s Ask Roger question came from Vivian who wrote, “Roger, I’m struggling trying to figure out what I can eat that is quick, easy, healthy and that will help me to lose weight. I don’t like to cook, especially just for myself and so many recipes make too many servings. I really don’t want to eat leftovers. What can I do for quick easy weight loss meals? Thank you, Vivian”

Thanks for that great question Vivian. Your question is one that I am frequently asked.

Quick easy weight loss meals

A Roger lunch

  • 1 cup brown rice 216 calories
  • ¼ cup black beans 156 calories
  • 1 cup Brussels sprouts 38 calories
  • ½ cup black-eyed peas 65 calories
  • 2 cups kale 66 calories

Total calories = 541

Delicious, quick, easy

One of my favorite weekend lunches is really easy. I keep frozen vegetables like Brussels sprouts or peas, or mixed veggies in the freezer. And I usually have something like black-eyed peas in the freezer as well. I put about 1 cup of Brussels sprouts with about ½ cup of black-eyed peas and heat them in the microwave.

While that’s heating, I take a can of black beans and rinse and drain them. I only use about ¼ cup at a time, the rest go in the refrigerator. At our house there is always a pot of brown rice in the fridge. I get out ½ to 1 cup of brown rice and mix with the beans in a bowl. I heat the rice and beans in the microwave.

We buy bags of kale at the grocery store that are ready to eat. I place a bed of kale on a plate, pour the rice and beans on top the kale and the Brussels sprouts and black-eyed peas on top of that. A little bit of salt and pepper and oh man! A delicious and satisfying and inexpensive meal in under 10 minutes.

It doesn’t matter if you are just wanting to eat healthy or wanting to lose weight, healthy eating can be totally satisfying, quick, easy, inexpensive and delicious.
