Forks Over Knives turned me on to this Baked Sweet Potatoes Stuffed with Chickpea Chili recipe from Vegan 8.
It meets my criteria for quick and easy and in my imagination, it’s absolutely delicious. I’m thinking that I will be baking up some potatoes and making up the chili. Then all I will need to do is re-heat the potato and reheat the chili and I’ll have several awesome meals!
