Breakfast Skillet

This breakfast skillet is perfect for an Easter brunch or any other meal any day of the year. I know because I made it last weekend for a family Sunday brunch. I made is Saturday and put it in a large baking bowl and into the fridge.

Sunday morning I put it in the oven at 350 for one hour, wrapped it in a towel and onto the ferry to Seattle. We we got to our son’s home – it went into the oven to keep it warm for about an hour.

When we left, I looked in the bowl and it was like it had been licked clean. Everyone loved it. My thought was that I would love it some night for dinner.

I added zucchini and some garam masala and the hot sauces were on the side for those of us who like it hot. This is one of the dishes that you can play with the ingredients and make it your own. I’m looking forward to making this Easter morning when our family gathers.
