YES, corn on the cob can be healthy weight loss food! One of my favorite memories as a young Minnesota farm boy is handing picking corn in the field and then running to the house to put it the pot of boiling water as fast as possible.

So sweet and so juicy! Of course back then, I loaded it with butter and I had the fat on my body to show for it. Did you know that one ear of sweet corn is only about 58 calories and just 3 of those calories are from fat?

Prepare your corn on the cob your favorite way

I first soak the corn in the husk in water. I prefer to grill it on my gas grill so I wrap each ear individually in foil and grill about 20 minutes – turning it every 5 minutes. Remove the husk and serve.

If I am just preparing 1 or 2 ears and not grilling anything else, I wrap the soaked corn in the husk in a wet paper towel and microwave it for about 3 1/2 minutes.

  • For each ear, I cut 1/2 small lemon (or lime) into quarters.
  • Mix curry & fresh ground black pepper in a dish.
  • Squeeze the lemon (or lime) wedge over a row of corn and dip the wedge in the curry.
  • Brush the curry with the lemon on the row of corn
  • Enjoy!
