Dandelions

I don’t know about you, but my yard is full of dandelions – they are everywhere! I remember once as a kid chewing on a dandelion that I picked in the yard – it was bitter and I spit it out.

I’ve heard for years people talking about dandelion tea and using the greens in salad and how healthy they are for you. But, I’ve never tried them. My curiosity got to me when I saw 25 Reasons To Go & Pick Dandelions Right Now. The health benefits are many.

When I checked it out, I was pleased to see all of these recipes for dandelions. I’m going to take advantage of the bounty in my yard and check some of these out. I’m particularly drawn to the risotto and to the jelly.

If you try any of these recipes or if you have other recipes for dandelions, please let me know. I’d love to hear from you.
