I love salads! A couple of weeks ago on a wilderness backpacking trip I was eating my freeze dried black bean lentil curry and thinking about how great a fresh salad would be. My first meal at home was a big fresh salad loaded with spinach, kale and veggies.
This French Green Lentil Salad from Forks Over Knives is very different from my usual dinner salad and it sure looks good. I’m looking forward to enjoying it.
