I love potatoes! My favorite potato meal is to partially steam red, purple and fingerling potatoes and then finish cooking them on the grill with onions. OMG! (They are good as a cold snack the next day too.) Another way that I have learned to prepare potatoes is to hand mash them with a fork and mix in avocado.
