I almost drooled when I read this Gazpacho with Roasted Tomatoes and Peppers recipe. I know that I posted another gazpacho recipe just last Friday. My hunch is you will see some others as the summer progresses.

I love roasted vegetables, so this one started the party in my mouth just with the title. Here in the desert – it’s too hot to light the oven. But the grill sits there ready to go and it’s perfect to roast veggies – even tomatoes. We just put the veggies in our grilling pans and onto the hot grill.
