Green Bean Salad

It’s still summer and it’s still hot – this Green Bean Salad is bright, colorful and served cold. That all sounds perfect to me and I’m looking forward to trying it.

Of course, if I’m making it, I’ll make it with out the olive (or any other) oil. If you make it, I’d love to hear about it. And, as always, please share your favorite whole-food plant-based recipes.

The dressing is simply olive oil, lemon juice, salt, and freshly ground black pepper. Since there is no mayonnaise or dairy in the salad, it is a perfect choice for picnics and summer barbecues. I can guarantee you we’ll be digging in to this salad all summer long.”
