I’m sure that I have written this before, but I’ll say it again: Pizza is still one of my all time favorite foods. Twenty years ago when I weighed 115 pounds more than I do now, I could devour a large 3 cheese pizza loaded with pepperoni, sausage, Canadian bacon and other deadly fattening ingredients.
Today, my pizzas are cheese-less. (I’m not a fan of the fake cheeses, I’ve tried – I but prefer no cheese). My pizzas are topped with spinach, kale, arugula, roasted red peppers, sun-dried tomatoes, pepperoncini, zucchini, pineapple and any other vegetables I can find in the fridge or on the restaurant menu.
With no cheese, the vegetables combined with hot peppers and sweet pineapple create a real party in my mouth!
