One of the things that I love about this Lentil Vegetable Soup by Heather McDougall is it’s simplicity. It’s a few simple ingredients and you can change it up every time you make it.
It only takes 15 minutes to prepare. I don’t know about you, but I like to double the recipe and it eat it for days. Like most recipes, it taste better as it ages and the flavors have the chance to marinate.

This lentil vegetable soup is a favorite of my boys and so easy to make. I think one of the reasons they like it, is because I chop all of the vegetables really small. And, like most of the soups I make, if you don’t have an ingredient, such as carrot or spinach, leave it out or substitute another favorite ingredient.
