Corn on the cob
Who knew – but last Monday was National Corn on the cob day! So, with that honor bestowed on this perfect plant-based food brimming with micronutrients and antioxidants I thought it only appropriate that this weeks recipe be this Mexican-Style Corn on the Cob.
I love corn on the cob and I’ve featured my favorite recipe on August 29, 2014. I’ll include a link to it later in this post.
This Mexican-style recipe has my attention and I’m sure I will make it. I will roast the corn in the husk on the grill and then spread the topping when its ready to serve.
