Color in food is important to me so this Mushroom Fideuà grabbed my attention. It doesn’t hurt that I love Spanish food and I love pasta.
And, as always, the 5 minutes of prep time sold me. When I make it, I’m sure I will use less (if any) olive oil. Most likely, I’ll use my non-stick pan with a little bit of vegetable stock and sauté the onions and other ingredients it that.
