–1 cup corn
-1 can black beans (drained & rinsed)
-1 can fire roasted tomatoes
-¾ cup of Quinoa
-1 tsp. chili power
-½ tsp cumin
-1 cup vegetable broth
Cover and simmer on low medium for 20 Minutes
Serve in a bowl and top with cut up avocados and squeezed lime
