When I saw the image of this Pineapple cake my heart skipped a beat. I’d forgotten all about Pineapple cake. I haven’t had any in years. But this sure brings back wonderful memories.
My Grandma Moore made the most amazing upside-down Pineapple cake. When I was a young boy (she was my age at that time and I thought really old) she made it from scratch. In her later years (she lived to be 98) she used a cake mix. Even then, it made a trip to Iowa to visit Grandma even more special.
Grandma, I love and miss you and one of these days soon, I’ll be making this Pineapple cake.
