Pumpkin beer stew
This Pumpkin Beer Stew is another excellent fall meal from Well and Full. Actually, I’d call it a chili – and I love chili. I love pumpkin and I love a good IPA. One thing about cooking with alcohol is that you get the flavor without the alcohol.
This recipe only takes about 15 minutes to prep and 20 minutes to cook. We love leftovers and stew like this only get better with age – so we will double it when we make it and have it several nights.
It calls for olive oil to saute the onions – I’ll use a tich of water and no oil. And, I’ll use fire-roasted tomatoes.
