One Pan Mexican Quinoa

1 onion
½ jalapeno
(Sauté)

Add:
1 cup corn
1 can black beans (drained & rinsed)
1 can fire roasted tomatoes
3/4 cup of Quinoa
1 tsp. chili power
½ tsp cumin
1 cup vegetable broth

Cover and simmer on low medium for 20 Minutes
Put in a bowl and top with cut up avocados and squeezed lime

I like to serve this in a burrito or corn tortilla
