This Southwestern Grilled Sweet Potato Salad sure looks yummy! And what a great delicious healthy dish for this Memorial Day Weekend.
As always, I’m sure I’ll put the sweet potato cubes in our grilling pan without any olive oil. (Yes, I will lightly oil the pan to keep it from sticking, but I won’t use the tablespoon of olive oil on the sweet potatoes – no need for that added fat.
This recipe looks and sounds delicious and I love the color! And, I of course love the simplicity of this recipe – especially that it only takes 10 minutes to prepare. And when I have my serving on my plate, I’ll be adding the hot sauce!
