I had two primary things in mind when I found this Spring Vegetable Vegan Paella from Citron & Citronella: 1) I wanted something different and I wanted something for spring.
Of course it also had to be plant-based and healthy. I’m usually also looking for quick and easy, but my taste buds lit up when I saw the image of this dish and then I read the ingredients. I love sun-dried tomatoes, artichokes, asparagus and the spicier the better. When you make this you will have to take your time … so be mindful. Enjoy the process and the delightful aromas and savor each taste.
