Stew Over Polenta
All it took was the word polenta and the picture of this Rustic Winter Stew Over Polenta to know that I just had to check this one out. I love polenta and I just don’t get enough of it.
It may not be winter yet, but the carrots out of the garden are so awesome at this time of year. I’m thinking down the road a bit of variations on this recipe and I bet squash would be a delicious edition. What variations on this recipe will you make?

Go for yukon gold potatoes that are about the size of a misshapen golf ball, that way you only need to slice them in half to prep. Baby carrots are especially helpful, too., if you’re feeling too lazy to slice carrots.
Of course if you don’t want to use polenta you can use mashed potatoes, rice or any manner or yummy starches.”
