Stuffed Pumpkin

It’s hard to believe, but Thanksgiving is less than two weeks away so it’s time for the annual Stuffed Pumpkin recipe! 

For those of you who have been receiving these blog posts for the 15 years, you know that I usually post this recipe before Halloween. Actually, I’m glad I am posting it late because I’m getting emails almost daily asking when I’ll post this recipe. For those of you who have asked, thank you! It’s nice to know that you actually read my posts.

For those of us who don’t eat turkey, this is a delicious alternative and it is a beautiful addition to your Thanksgiving table. If your family is like mine, you will have those who must have the bird for Thanksgiving. Our family always has a turkey (not me) and a Stuffed Pumpkin and several vegetable side dishes. Be sure you save some Stuffed Pumpkin for yourself because you can count on the turkey eaters eating Stuffed Pumpkin too!
