Sweet Potato Pudding
Even though sweet potatoes have a natural sweetness to them, they are more often used in savory dishes. This pudding is healthy enough for breakfast and just sweet enough for dessert!
Makes 3 1/2-cup servings
Ingredients
1/3 cup rolled oats
1/2 cup fortified soy or rice milk
1 cup cooked sweet potato or yam
1 tablespoon maple syrup
1/4 teaspoon cinnamonDirections
Combine all ingredients in a blender and blend until smooth.
Per 1/2-cup serving: 119 calories; 1.3 g fat; 0.2 g saturated fat; 10.1% calories from fat; 0 mg cholesterol; 3.7 g protein; 23.9 g carbohydrates; 8.6 g sugar; 2.9 g fiber; 40 mg sodium; 77 mg calcium; 1.4 mg iron; 7.7 mg vitamin C; 5541 mcg beta-carotene; 1.2 mg vitamin E
