SFL RecipesOne of my favorite appetizers is fresh steamed green beans with Szechuan sauce. Its a delightful dish that works either with the beans as finger food that you dip into the sauce or where the sauce is already poured over green beans and you eat the beans with a fork or chop sticks. It makes wonderful party food and it is excellent as a vegetable dish as part of a meal. Your guests will devour it (so make a large batch). The few times there has been any left over, they went into the fridge and became a snack or vegetable for lunch or dinner.

My first experience with green beans in Szechuan sauce was a few years ago in a bar in Minnesota. I was visiting my youngest son and his wife and my son told me that he was taking me to happy hour. We walked into a bar and ordered our craft beer and ordered an appetizer. I didn’t hear what he ordered but while we were talking and enjoying our brew, out came a platter heaped with green beans with a dish of dipping sauce. I was thrilled to be able to be with my son, enjoying a good beer and have something healthy to snack on. It’s one of those wonderful moments with my son that I will always cherish. Living healthy really can be fun!

Szechuan Sauce

I make this Szechuan Sauce and drizzle it hot over fresh steamed green beans or I serve it in a dish as a dipping sauce with fresh steamed green beans.

  • 2 tablespoons dry sherry
  • 1 1/2 tablespoons minced peeled ginger
  • 2 garlic cloves, minced
  • 1 teaspoon of finely chopped / minced chilli pepper
  • 1/2 cup vegetable stock
  • 2 teaspoons cornstarch
  • 1 1/2 tablespoons soy sauce
  • 1 1/2 tablespoons of mushroom / vegetarian oyster sauce
  • 1 teaspoon sugar
  1. Lightly sautee ginger, garlic & chilli in Szechuan Peppercorn Oil.
  2. Add sugar, sherry and sauces and warm to near boiling.
  3. Combine broth and cornstarch in small bowl; stir to dissolve cornstarch.
  4. Stir the cornstarch mixture into the sauce mixture. Stir until thickened.
