I’m excited about this Tamale Pie recipe from Plant-Based Cooking. I’m a big fan of Mexican food. I love the flavors and I know that in a Mexican restaurant I can always get a meat and dairy free meal.
When I’m on the go and need a quick lunch, I look for Mexican fast food. A veggie burrito with no cheese and no sour cream and as hot and spicy as I can get it will often be two meals for me.
This Tamale Pie looks really delicious and I’m excited to try it out. I’ll have to make it pretty mild for my wife, but that’s OK. I’ll be doctoring it up once it’s on my plate!
