The pizzas we make at home are almost casseroles. Mine are filled with zucchini, summer squash, red, green, orange bell peppers, sun-dried tomatoes, fresh tomatoes, spinach, arugula, pepperoncinis, pineapple, pizza sauce, oregano, basil, Italian seasonings, crushed red pepper and what ever other vegetables are available and sound good in the moment – all in a whole-wheat crust. One slice is a meal! We do make two separate pizzas. My wife’s pizza will not have arugula or any of the good hot stuff. She will load hers up with mushrooms and olives along with many of the other vegetables. That’s the beauty of build your own – you get what you want!
