Vegan chili was our Slender For Life™ recipe for our Super Bowl party. It’s a delicious meal that is warm and hearty. We’re also eating it for our dinners this week and the leftovers freeze perfectly for future lunches. You can eat delicious, comforting hearty food while you lose weight and improve your health. Vegetables (You can use any vegetables you like)
2 onions diced
2 zucchini’s diced
1 yellow squash diced
1 ½ red peppers diced
1 green pepper diced
8oz tub of mushrooms
3 cups sliced carrots
(Sauté in water in a non-stick pan)
1 large can of whole tomatoes
1 12oz can of tomato paste
1 15oz can of tomato sauce
2 15oz cans of stewed tomatoes
1 15oz can of diced tomatoes
2 cans of kidney beans
1 can of great northern beans
1 can of black beans
2 cups of frozen corn
3 Tbls. chili powder
2 tsp. garam masala
1 Tbls. basil
2 tsp coriander
2 tsp cumin
1 tsp paprika
Other spices to taste – make as hot or mild as you like
Put sautéed vegetable in sauce.
Simmer for at least 2 hours
Serve over brown rice
Serves about 15: This is a double recipe, you can cut it in half if you don’t want this much.
When we have guests who are meat eaters, we cook up a pan of beef. The meat eaters put the meat in their bowl, the rest of us put rice in our bowl and we all pour the chili on top.
