This is a simple, basic recipe that is my favorite and it is mouthwatering.
Sauce: Prepare your favorite vegan pasta sauce. Marilyn doesn’t follow a recipe and it’s never quite the same twice – but always good. She stir fries zucchini, onions and mushrooms separately, drains the water and then adds this to the sauce.
Noodles: Whole grain lasagna noodles – prepare according to the directions.
Filling: Cooked spinach, squeezed and drained.
Layer pan with noodles, sauce and spinach.
Bake: 60 minutes at 350.
