When I grew up Sunday supper was a very special time at our home. It was our largest meal of the week and the one meal that everyone in the family attended. Sunday is also my favorite day of the week to invite family and friends over and share some wonderful plant-based meals. Today I was yearning for a stick-to-your-ribs kind of meal so I made this lentil quinoa loaf with mashed potatoes and gravy. For me the gravy really makes this dish and you could pour that mushroom gravy over anything and it would taste delicious. The lentil loaf has a lot of ingredients but it is really necessary to achieve enough flavor from the high-protein lentils. This recipe made a half of a loaf pan, but you can double it for a big family. Hope you enjoy this plant-based vegan recipe as much as I did.
