I’ve said it before – I do love a great risotto so this vegan risotto jumped off the screen at me. We’ve got 3 events coming up: This Saturday night our neighborhood is having a potluck, Easter is a only 9 days away and Mother’s Day is right around the corner.

I’m pretty certain that this Vegan Risotto with Asparagus and Peas will show up at one or more of these events.

According to the recipe, it’s quick and easy to prepare – which of course I like that too! One cool thing I’ve discovered about this recipe site is that you enter the number of servings that you want and it automatically calculates the ingredients for you. AWESOME!

And if you don’t like peas – substitute them with a vegetable that you do like.
