Sweet Potato and Black Bean BurritoSweet potato and black bean burrito is one of my favorite quick, simple and very tasty recipes. In the late fall and winter months we regularly bake sweet potatoes and year round there is always a pot of brown rice in the fridge. The food shelves in the garage always have cases of various beans and most of the time there is a storage container of beans in the fridge too. So whipping together a quick, simple, inexpensive and very tasty meal is pretty easy. And, there are so many different meals and variations you can make with a few basic ingredients. I love this burrito for lunch – its perfect energy before going for a bike ride or working in the yard. It can be easy for you to set yourself up for weight loss success with healthy plant based food. Sweet potato and black bean burrito is this weeks featured Slender For Life™ recipe.

Sweet Potato and Black Bean Burrito

Basic Recipe

Previously prepared ingredients usually
found in our refrigerator:

  • Baked sweet potatoes
  • Brown rice
  • Black beans (rinsed and drained)
  • Avocado
  • Tortilla

To make one burrito:

  • One sweet potato with peel
  • Fresh salsa
  • Brown rice
  • Black beans (rinsed and drained)

Optional Ingredients:

  • Ground cumin
  • Ground coriander
  • Diced Chilies
  • Chilli Powder
  • Hot sauce
  • Let your imagination, cupboard, refrigerator
    and time be your guide

Preparation

Use a fork to mash the sweet potato in a bowl. Mix in salsa. Mix in brown rice and spices. Mix in black beans. I like mine mushier so I tend to go heavier on the sweet potato and salsa and lighter on the rice and beans. Heat in microwave until hot.

While ingredients are heating I warm and lightly brown the tortilla in a non-stick pan on the stove (no oil). Remove tortilla from pan and put avocado on half the tortilla, then add heated ingredients. I fold the tortilla over the ingredients and top with salsa to hold the tortilla in place. I place the entire burrito in the microwave for one more minute. Remove from the microwave and add cold salsa.

With the sweet potatoes already baked, the riced cooked and the can of beans already open and stored in a container in the fridge, the prep time for this burrito is less than 10 minutes.

If I’m feeling really ambitious and have the time, I place the burrito in a small baking dish, pour tomatillo sauce over it and bake it at 425 for about 15 – 20 minutes (I like the top of the tortilla to get crispy). YUMM!!!
