The February 2, 2009 Dole Nutrition News says: “‘Eat your colors’ is the oft-repeated dietary advice, aimed at increasing your intake of disease-fighting phytochemicals that lend tomatoes, carrots and blueberries their bright hues. But white produce — like cauliflower, potatoes, onions and mushrooms — are nutrition stars in their own right.
Cauliflower: Italian researchers found cauliflower compounds target breast cancer cells, suppressing growth and even promoting cancer cell death. Eating just 1/2 cup of cauliflower a week could also slash prostate cancer risk by nearly half.
Potatoes: One small russet potato provides 56% of your daily vitamin C needs, plus a dose of chlorogenic acid — a powerful antioxidant that may block carcinogens particular to cigarettes and some cured meats. Indian researchers found that extracts from potato skins protect human blood cells from free-radical damage. A recent British study discovered compounds in potatoes called kukoamines, which may lower blood pressure levels.
Onions: Boost bone density with onions, which inhibit the loss of bone mineral, including calcium. Onions also contain more quercetin than any other common fruit or vegetable. This immune-boosting antioxidant can help reduce the risk of heart disease, Alzheimer’s, prostatitis and a variety of cancers (such as prostate and lung cancer). One Finnish study also linked high quercetin intake with 60% less lung cancer, 25% less asthma, and 19% lower diabetes risk and 21% fewer heart disease deaths.
White Beans: Just one cup of white beans provides half of your fiber needs for the day, with a whopping 17 grams of protein! White beans also provide loads of antioxidants, plus an excellent source of phosphorous, folate, potassium, copper and iron.
Mushrooms: White button mushrooms could enhance your body’s “natural killer” cells, improving your immunity to disease-causing viruses, according to Tufts researchers. Some health gurus disparage white mushrooms because they contain agaritine, which one decades-old animal study suggested could be carcinogenic. But far more recent human research found a drop in cancer among those who consumed agaritine-containing mushrooms.”
