This is a fun and delicious recipe that is quick and easy to make.
It’s one that I like to switch up and spice up.
I’ve substituted salsa for the tomatoes and I’ve also made it with Cajun spices and I’ve made it with Mexican spices.

Mrs. Holmes’ Corn, Okra and Tomatoes

2 – 14 oz cans of tomatoes
10 oz frozen okra
cooked brown rice
1 teaspoon sugar
1 1/2 to 2 cups frozen corn
1 large green pepper, chopped
1 clove garlic, minced
salt and pepper to taste
Combine all of the vegetables and spices in a large skillet. Bring to a boil. Reduce heat, cover and simmer 25 – 30 minutes until the vegetables are tender and done. Stir every 5 minutes to keep vegetables from sticking. Serve over brown rice.
